We love a good carrot cake - but what about a “blondie-inspired” carrot cake bar with delightful cream cheese frosting? We actually created the bars from a box mix and the homemade cream cheese made it feel like a bakery creation!

We’re all about keeping it simple! To whip up the cream cheese frosting, it’s —

  • 8 ounces of Cream Cheese (softened)
  • 1/2 cup (1 stick) Butter (softened)
  • 2 1/4 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • ¼ cup of shredded carrots for garnish

In a mixing bowl, cream the softened cream cheese and butter for 2 minutes. Add powdered sugar and vanilla while whipping for 2 minutes longer. Once the bars are cooled, frost and garnish. (Double this recipe if you want to add in the cream cheese mini pies.)

The one recipe that seemed a little difficult was these delightful carrot croissants stuffed with chicken salad — but they were pleasantly easy to do! Create a cone shape with tin foil and slowly wrap 1” strips of croissant around the foil until formed. Bake as instructed on the package and you’ll have a golden finish! Be sure to watch them so they don’t overcook. You can use your favorite store-bought chicken salad or whip up the family recipe. Once the croissants have cooked and you’ve wiggled the foil molds free, fill with the chicken salad and garnish with dill!
